My mother always seems to misplace the recipe for this so I thought I would put it up on my blog so we can pull it up whenever we need it. Conference time is coming and we usually get together and end up making this. It is so addicting. This picture was actually taken in Aug. of 2009 but I never did get it posted.</div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEikQiqtxdc7aOaIjpS5645sQD9-FV4hVK_T15Nmr3xh5qcgaeszwx3kaWJI0VEvFTbPehx3d9Ulj-L7HnN1LLeQ-33bla05Vurx8kmurJfr6-flWOpCuWz990XpU7gsyQ2zg8lbH8mXrXY/s1600/IMG_2989a.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="300" ox="true" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEikQiqtxdc7aOaIjpS5645sQD9-FV4hVK_T15Nmr3xh5qcgaeszwx3kaWJI0VEvFTbPehx3d9Ulj-L7HnN1LLeQ-33bla05Vurx8kmurJfr6-flWOpCuWz990XpU7gsyQ2zg8lbH8mXrXY/s400/IMG_2989a.jpg" width="400" /></a></div><br />
<div style="text-align: left;">Carmel Popcorn</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">3 gallons popped corn</div><div style="text-align: left;">2 1/4 cup brown sugar</div><div style="text-align: left;">1 can sweetened condensed milk</div><div style="text-align: left;">1/2 cup margarine/butter</div><div style="text-align: left;">1 cup corn syrup</div><div style="text-align: left;">1 tsp. vanilla</div><div style="text-align: left;">pinch of salt</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Pop pocorn in two BIG bowls...Please please please pull out the kernels that made it into the bowl without popping. Of course make sure your hands are nice and clean before you do this as you will be sifting through trying to find them. One of my biggest pet peeves is finding a ton of kernels in my carmel popcorn. I am not perfect and will occasionally find one or two but it's better than finding twenty or thirty. YUCK! To make it easier I usually pop one bowl and then scoop up the popcorn in the second bowl so all the dead kernels fall to the bottom. You will need to have another container out after you filled up your second bowl so you can transfer the popcorn to look for dead kernels. Make sure your bowls are big enough to hold the 3 gallons of popcorn in. You should have about 1 1/2 gallons in each bowl. </div><div style="text-align: left;"><br />
</div><div style="text-align: left;">After you popped the corn start on your carmel. Over medium heat cook ingredients to a soft boil stage. Keep a cold cup of water to drop your hot carmel in. To see if it's ready stir the carmel in the water with your fingers to see if you can make a soft ball out of it. That way you know it is ready to pour over the popcorn. Once it is ready add the tsp. of vanilla. Quickly stir it and remove from heat. Split the carmel between the two bowls and stir quickly. </div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Let cool a bit before you eat it because you will burn your fingers and mouth. It's hard to wait because we just want to start eating it right away. Be sure to keep it stored covered. I am not sure how long it is good for because it usually is gone in a day or two anyway. :)</div>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com2tag:blogger.com,1999:blog-6952546426156105384.post-20923604710467255092010-09-01T09:33:00.000-07:002010-09-01T09:34:00.895-07:00Spinach Pasta Salad<div style="text-align: center;">And I thought Spinach was gross........</div><br />

<div style="text-align: center;"><br />
I feel like I am in Heaven when I am eating this baby up. It is soooo good. I really need to make it at least a couple times a month. I am sure some of you have seen different versions of this salad. I got this one from a friend of mine. I am not sure where she got it from but it is too good not to share. So, here ya go.</div><div style="text-align: center;"><br />
</div><div style="text-align: left;"><strong><em><span style="font-size: large;">Spinich Pasta Salad</span></em></strong></div><div style="text-align: left;"><br />
</div><div style="text-align: left;">The dressing:</div><div style="text-align: left;">1 cup Canola oil</div><div style="text-align: left;">1/3 cup Soy Vay Veri Teriyaki Sauce</div><div style="text-align: left;">1/3 cup Rice Vinegar</div><div style="text-align: left;">1/3 cup Cider Vinegar</div><div style="text-align: left;">1/2 tsp Salt</div><div style="text-align: left;">1/2 tsp. pepper</div><div style="text-align: left;">6 T. sugar</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">Salad ingredients:</div><div style="text-align: left;">8 oz. bowtie pasta (cooked and drained)</div><div style="text-align: left;">1 bag spinach</div><div style="text-align: left;">1 cup craisns</div><div style="text-align: left;">1 small can mandarin oranges</div><div style="text-align: left;">3-4 green onions</div><div style="text-align: left;">1 cup peanuts or cashews</div><div style="text-align: left;">2 cups or 2 cans chicken</div><div style="text-align: left;">1/2 cup sunflower seeds (opt)</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">About 3 hours before serving, put pasta and chicken in a bowl and pour about 1/2 - 2/3 of the dressing over it and let soak (you can do this overnight too). When ready to serve, add all ingredients and mix until they are coated with dressing. Let each person add more, if desired. Serves about 4....or more if you have it as a side dish.</div><div style="text-align: left;"><br />
</div><div style="text-align: left;">I have it set up like a buffet. So you can put whatever you want on it. If you don't like the pasta then just use more chicken. It really is delicious.</div><div style="text-align: center;"><br />

<div align="center">This recipe is taken from one of my most favorite Recipe books "Favorite Brand Name Best-Loved Chocolate Recipes." Here is what you have been waiting for:</div><div align="center"><br />
</div><div align="left">2 cups crushed chocolate cookies or vanilla wafers (about 8 ounces cookies)</div><div align="left">1/4 cup (1/2 stick) butter, melted</div><div align="left">2 1/2 packages (8 ounces each) cream cheese, softened</div><div align="left">1 cup sugar</div><div align="left">1 1/2 tablespoon all-purpose flour</div><div align="left">1/4 teaspoon salt</div><div align="left">1 1/2 teaspoons vanilla</div><div align="left">3 eggs</div><div align="left">2 tablespoons whipping cream</div><div align="left"> Caramel & Chocolate</div><div align="left"> Toppings (recipes follow)</div><div align="left">3/4 cup chopped toasted pecans</div><div align="left"><br />
</div><div align="left">Prehat oven to 450 degrees. For crust, combine cookie crumbs and butter; press onto bottom of 9-inch springform pan.</div><div align="left"><br />
</div><div align="left">For filling, beat cream cheese in large bowl with electric mixer until creamy. (You may want to look at the tip <a href="http://cjaneinthekitchen.blogspot.com/2010/05/kitchen-tip.html"><span style="color: red;">here</span></a> at See Jane in the kitchen. This is an awesome tip.) Beat in sugar, flour, salt and vanilla; mix well. Add eggs, one at a time, beating well after each addition. Blend in cream. Pour over crust. (Don't forget the whipping cream. I did, oops, but it still turned out fine.)</div><div align="left"><br />
</div><div align="left">Bake 10 minutes; reduce oven temperature to 200 degrees.</div><div align="left">Continue baking 35 to 40 minutes or until set. Loosen cake from rim of pan; cool completely before remving rim of pan. Meanwhile, prepare Caramel and Chocolate Toppings. </div><div align="left"><br />
</div><div align="left">Drizzle cake with toppings. Refrigerate. Sprinkle with pecans before serving.</div><div align="left"><br />
</div><div align="left">CARAMEL TOPPING: Combine 1/2 (14-ounce) bag caramels and 1/4 cup whipping cream in small saucepan; stir over low heat until smooth.</div><div align="left"><br />
</div><div align="left">CHOCOLATE TOPPING: Combine 4 squares (1 ounce each) semisweet chocolate or 4 ounces semisweet chocolate chips, 1 teaspooon butter and 2 tablespoons whipping cream in small saucepan; stir over low heat until smooth.<br />
<br />
(I just drizzle the toppings with the spoon I stir it with. I have tried different ways but have found one I really like.)</div><div align="left"><br />

Well, last night we had pizza. So here are some pictures of the dough again. Go <a href="http://ruthysdiner.blogspot.com/2010/04/cinnamon-rolls.html">here</a> for the recipe.</div><br /><br /><p><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgPR8mntxdyHjxb0_XjCR5OOys1HmMjZedncEPeMZ60jcuHAg-x_n5lJg8CtJTGQvbxr5THEk6MB54zcsB_P22iU_-NwNFEkJ8tY_LVgRKyfb3of3eVLd138iOsoO0-iGGwjftQNDKuUmE/s1600/2010_04_131.jpg"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 300px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5460079313130421970" border="0" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgPR8mntxdyHjxb0_XjCR5OOys1HmMjZedncEPeMZ60jcuHAg-x_n5lJg8CtJTGQvbxr5THEk6MB54zcsB_P22iU_-NwNFEkJ8tY_LVgRKyfb3of3eVLd138iOsoO0-iGGwjftQNDKuUmE/s400/2010_04_131.jpg" /></a> </p><p align="center">I used my awesome stone pan to roll my dough on. Keep it about an inch away from the edge of the pan. Spread with Pizza sauce, layer with Pepperoni, bake at 375 for 13 minutes, pull out and sprinkle cheese on it and bake for another 2-3 minutes...until cheese is melted. Be sure to eat some pepperoni while you are layering it on the pizza. That is the funnest part. I mean come on, you want to make sure it tastes good. Slice...serve...enjoy. I actually made my husband a calzone with it. I placed pepperoni, ham, and cheese inside after brushing it with pizza sauce first. I then folded it over, poked it with a fork, and baked for about 13 minutes. I heated some extra sauce for him and just spread it on top after it was done. I would have added more filling but I didn't have some of his favorite toppings so it was just a simple calzone.<br /></p><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi8wmkHtbQQAhiWvGW96WgNlNICSfkUoVtOe9tvqDMUod35C9kK5gTCRjB9mmnrsEI15N2bAemn8a8qUEiLO7JxO-P3Yq1ohTzYQ4n4_9_UcEPj0fYxXg05ree-NK8YuQVKzgKaGd1e8zw/s1600/2010_04_13.jpg"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 300px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5460078815826864594" border="0" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEi8wmkHtbQQAhiWvGW96WgNlNICSfkUoVtOe9tvqDMUod35C9kK5gTCRjB9mmnrsEI15N2bAemn8a8qUEiLO7JxO-P3Yq1ohTzYQ4n4_9_UcEPj0fYxXg05ree-NK8YuQVKzgKaGd1e8zw/s400/2010_04_13.jpg" /></a> <div> </div>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com1tag:blogger.com,1999:blog-6952546426156105384.post-21884677035643818012010-04-12T15:09:00.001-07:002010-04-12T15:41:40.441-07:00Cinnamon Rolls<div align="center">WHAT? It is true. I am posting again. I have been very lazy, busy, o.k. just lazy. I made these Cinnamon Rolls for the Young Women in my ward and told them I would get them the recipe since I spaced typing it up for them the night I demonstrated. I have made them multiple times since I demonstrated them too but have forgotten to take pictures. I forgot to take a few pictures during this process so you only get the ones I took. Oh well.<br /><br /></div><p><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiC5UHrJjmwHzLq455lAWBz9Oi_5ADQSkXQxQIZ97jlHdEOTKb3GSJYrba53Ruz9dBhn40X8WdCgKOeDwHkrRX35IDJgKYvVXuJLoXIM8OJdBxiM8CFqLc5_bNc0SYUx2Rk1ec4tP_MPiQ/s1600/2010_04_07.jpg"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 300px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5459377298653524802" border="0" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiC5UHrJjmwHzLq455lAWBz9Oi_5ADQSkXQxQIZ97jlHdEOTKb3GSJYrba53Ruz9dBhn40X8WdCgKOeDwHkrRX35IDJgKYvVXuJLoXIM8OJdBxiM8CFqLc5_bNc0SYUx2Rk1ec4tP_MPiQ/s400/2010_04_07.jpg" /></a> </p><p></p><p>Cinnamon Rolls</p><p>2 Tblsps. Yeast</p><p>1/4cup warm water</p><p>--------------------------</p><p>1/2 cup butter/margarine</p><p>2 cups warm water</p><p>1/2 cup sugar</p><p>2 tsp. salt</p><p>2 eggs</p><p>6 cups flour</p><p>Cinnamon</p><p>Brown Sugar</p><p>Chocolate Chips (Or desired filling)</p><p></p><p>Make the yeast mixture first. In a bowl mix the 2 Tblsps. yeast and 1/4 cup warm water. I also sprinkle a spoonful of sugar over it and then lightly stir the yeast mixture. Set aside and don't disturb.</p><p>In a bigger bowl mix the butter and two cups warm water. I usually cut up my butter so it melts easier in the water. I let it sit for a minute and then stir it and make sure it is softened or melted all the way. Add the sugar salt and eggs. Mix well. Mix in 3 cups of the flour. Make sure you mix it well. At this point check on the progress of your yeast. Your yeast should have grown by now. If not you will need to do it over. THE YEAST IS THE MOST IMPORTANT THING. It may take some time to practice to get the right temperature but you will learn as you go. At this point add the yeast and stir. After you mixed it in add about 3 more cups of flour. I add a little bit at a time to make sure I get the right consistency. Sometimes I end up not adding all six cups. Just watch it. Cover and let rise for about an hour. At this point I used to punch it down and cover and place in fridge for about another hour. Because I am naughty and learned it can be down without the second rise I usually don't do the fridge rise anymore. Anyway, you will need to melt enough butter to spread over dough. Sprinkle flour down on the counter and take about 1/2 your dough and roll into a rectangluar shape. Brush melted butter on dough. Sprinkle with Cinnamon, brown sugar, and then Chocolate Chips, or raisins, or just keep them plain. Roll the dough towards you and pinch closed. Use a piece of thread to cut your Cinnamon Roll shapes. Slide thread under and cross each piece to cut. Place each roll in sprayed pan. Let rise for about 45 minutes. Place in preheated oven on 375 degrees for 12-15 minutes.</p><p></p><p>Frosting the Rolls</p><p>While the rolls are cooking make the glaze. I don't have an exact measurement. I usually just eye it. But for starters here is what you can do.</p><p>2 cups powdered Sugar</p><p>1 tsp. vanilla</p><p>1/4 cup milk (then add a Tblsp. until you get the right consistency)</p><p>When the rolls are done, pull them out and drizzle with glaze. Make more glaze as needed.</p><p></p><p>Plain Rolls</p><p>If you just wanted to make plain rolls instead of cinnamon rolls just roll out your door and use a circle shape from a cup or a cookie cutter to cut your rolls. Brush each circle with butter and roll your circle up. Place side by side in sprayed pan. Let rise for 45 minutes . Cook at 375 for 12-15 minutes. Eat plain or add butter or jam. YUM!</p><p>Just a note*** I also use this dough to make my pizza crust with. It makes for a yummy crust.<br /></p>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com4tag:blogger.com,1999:blog-6952546426156105384.post-73436521725238057292009-12-14T18:47:00.000-08:002009-12-14T19:05:43.816-08:00Sticky Chicken<div align="center">Hello...Hello...Have you given up on me? I found it from a recipe book called <em><strong>Go Forth To Serve</strong></em>.<br /><br /></div><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj_zOfQV6oQJFA-A1jLq6uIkgsTURRnRhaNRg5YvLR6RjD4NLSBSrONyLAWVYuKlKfkZIcJsio5xMB5ZakJmInzB620ng8uwviHbGYFu6jPdHlmbdxJzf6gIX1eaKzQTFA5-5o8xwIntvI/s1600-h/2009_12_14.jpg"><img style="TEXT-ALIGN: center; MARGIN: 0px auto 10px; WIDTH: 400px; DISPLAY: block; HEIGHT: 300px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5415289781994159698" border="0" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj_zOfQV6oQJFA-A1jLq6uIkgsTURRnRhaNRg5YvLR6RjD4NLSBSrONyLAWVYuKlKfkZIcJsio5xMB5ZakJmInzB620ng8uwviHbGYFu6jPdHlmbdxJzf6gIX1eaKzQTFA5-5o8xwIntvI/s400/2009_12_14.jpg" /></a><br /><div align="center"></div><div align="center"><em><strong>Sticky Chicken</strong></em></div><div align="left"><strong><em></em></strong></div><div align="left">1 1/2 lbs. boneless, skinless chicken breasts cut into bite sized strips</div><div align="left">1 cup apricot or plum jam</div><div align="left">1 cup fat free Catalina salad dressing or barbecue sauce</div><div align="left"></div><div align="left"> </div><div align="left">Saute the chicken strips until lightly browned. I found this recipe off of the KSL news website and it looked easy enough for me. It has "No-Fail" in the title of the recipe so I thought that if I failed then bread making isn't for me. To tell you the truth I have made bread a few times before. I have practiced making my Grandma's Wheat Bread and it isn't until recently that I think I finally got it down. Like I said, "Don't give up. Pick yourself up and try again." This is Delicious bread and seriously easy to make.<br /><br /></div><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgGwC_PCvNxHIwiwq5Yd9PSzJdyrh-wKIkJ-4VQXEfqYvKlyTMdmiCkNBy3_jh3vEUc049Je4AzyXO0lruXBbNjG7KImtEbf_4TNGRbSdgz7tmJFKHIpm0u6hjBdmObHvZotG1tcA1NYZo/s1600-h/IMG_2333.JPG"><img id="BLOGGER_PHOTO_ID_5317880007569204482" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 222px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgGwC_PCvNxHIwiwq5Yd9PSzJdyrh-wKIkJ-4VQXEfqYvKlyTMdmiCkNBy3_jh3vEUc049Je4AzyXO0lruXBbNjG7KImtEbf_4TNGRbSdgz7tmJFKHIpm0u6hjBdmObHvZotG1tcA1NYZo/s400/IMG_2333.JPG" border="0" /></a><br /><br /><div></div><div></div><br /><div>No-Fail Yeast Bread<br /></div><br /><br /><div>Ingredients:<br />· 5 cups warm water<br />· 1/4 cup oil<br />· 1 1/2 Tbl. salt<br />· 1 cup honey, or 3/4 cup sugar<br />· 3 Tbl. yeast<br />· 3 Tbl. dough enhancer, (optional)<br />· 11-14 cups flour<br /></div><br /><div></div><br /><div>Method:<br />This recipe is easiest if a large mixer is used. Flour hands and remove from mixer. Divide into 4 parts. Shape each part into a loaf and place into greased loaf pans. Cover and allow to rise until dough is 1 inch above pan. We had chicken and steak, that was left soaking in sauce, pineapples, mushrooms, green peppers and onions all mixed in the dish. We lined the pan with Foil and baked it on 400 degrees. I think it took about an hour. A little longer than we had hoped. The chicken wasn't cooking fast enough. Anyway, it was delicous along side the bread I made. You can cook up some rice to go with this dish as well. </p>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com1tag:blogger.com,1999:blog-6952546426156105384.post-50482905067986129422009-02-22T20:46:00.000-08:002009-02-22T21:02:47.745-08:00Mini Chocolate Tarts<div align="center"><em>DELICIOUS!!!</em></div><div align="center"></div><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh7gLqGentmAjez__zsUUyq6l1Nd2PDvLh3e7Zspy9QXO6eno1ti0oNbnY9YV53NBpmIvE5IgDeIW2gLmhkUhP1LTZQsBekf5tYbdXJ5-QzjSepFZLpuAhkHF89ylNPQm_oseB43Q-x_fI/s1600-h/IMG_2274.JPG"><img id="BLOGGER_PHOTO_ID_5305850314397452370" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 186px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEh7gLqGentmAjez__zsUUyq6l1Nd2PDvLh3e7Zspy9QXO6eno1ti0oNbnY9YV53NBpmIvE5IgDeIW2gLmhkUhP1LTZQsBekf5tYbdXJ5-QzjSepFZLpuAhkHF89ylNPQm_oseB43Q-x_fI/s320/IMG_2274.JPG" border="0" /></a><br /><br />I must admit I found this new website and found this delicious recipe. You really need to check out <a href="http://www.stephanieskitchen.com/">http://www.stephanieskitchen.com/</a> It is absolutely awesome. She has some great recipes. While I was making them I think I recall my friend Bobbi had made something like this. I doubled the recipe and it made A LOT! They are great. You can top them off with strawberries or raspberries or just plain, like I did.<br /><br />Mini Chocolate Tarts makes 24 tarts<br /><br />1 box chocolate cake mix<br />1 egg<br />1/2 cup melted butter1<br />3.4 oz box instant chocolate pudding<br />1 cup half and half<br />1 8 oz container cool whip<br /><br />1. In a large bowl, mix together the cake mix, egg and butter until smooth. Scoop batter 2/3rds full into a mini muffin tin sprayed with non stick spray. Bake at 350 degrees for about 10 minutes or until the edges are set. Immediately press down the centers of the cups using a tart shaper or a plastic lid of a soda bottle. Cool completely.2. In a medium bowl, mix the pudding with the half and half until smooth. Fold in the cool whip. Spoon or pipe into the cups and top with a fresh strawberry or raspberry.<br /><br /><br /><img id="BLOGGER_PHOTO_ID_5305851248531650946" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 282px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEijTgZ1_Jz6ikX6m3yKFfHVMLTFHtQv5YPzJh7FuJ8D4vtgXtB4q1rkhGcitW5MOsT2zzl3_bvtiRagw_XmL_RHBbphyphenhyphen7WhIwM4IMX2LH7xN4L-1FCaeX0RSUkEQDvbLdEg04q67ajLfWw/s320/IMG_2276.JPG" border="0" />R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com1tag:blogger.com,1999:blog-6952546426156105384.post-14351808153736764052009-02-19T10:18:00.001-08:002009-02-19T10:29:23.592-08:00Chicken EnchiladasThis is a very delicious recipe. I don't make it very often because I don't always have the right ingredients on hand and then I forget to buy them while I am out. I suggest to <span style="color:#ff0000;">DOUBLE</span> or <span style="color:#ff0000;">TRIPLE</span> the recipe because if you don't you won't have enough. At least that is how I have experienced it. We did triple it the other night because we brought dinner into someone and we definitely had enough with a little extra we placed in the freezer.<br /><br /><br /><br /><p><img id="BLOGGER_PHOTO_ID_5304575167246279010" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 235px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgfkxRxWPhxNNjNiLLGSl9AR0Oyyk6l2lkLTPHZXNkmgwhJEAI5txe_pgGZzq3ecAbU_mVT5z6Et5E-G1x67KrNrN59qmvbBi21LYlHObx2_8-AxsEFmt29Ccn5JPf6f4LPoLaEGFFcEdc/s320/IMG_2258.JPG" border="0" /></p><p align="center">(Sorry about the plate...I forgot to take a picture of it the night before and this was leftover at lunch the next day so I was using a snowman plate! :/ )</p><p><br /></p>Chick Enchiladas<br /><br />1 can Cream of Chicken soup<br />1/2 cup sour cream<br />2 Tblsp. margarine<br />1/2 cup chopped onion<br />1 tsp. chili powder<br />2 cups cooked chicken<br />1 can green chilies (diced or chopped)<br />1 can of mushrooms (I don't add unless Corey makes me put it on a few of them.)<br />8 flour tortillas (I use the ones they make at Walmart. It'll be a hit.R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com1tag:blogger.com,1999:blog-6952546426156105384.post-67198889476412875612009-01-30T21:02:00.000-08:002009-01-30T21:38:33.869-08:00Chicken Taco PieI seriously don't know why this recipe is called <em>Chicken Taco Pie</em>. It is not made in a pie pan nor does it resemble a pie. This is just what I know it as. This is a hit with my family except child number three who thinks everything I put in front of him lately is "YUCK." He did used to eat it and want more but for some reason he has decided he doesn't like anything right now. Anyway, here is the recipe along with some pictures that may help or hinder the process.<br /><br />Chicken Taco Pie<br /><br />4-6 Flour Taco Shells<br />1 1/2 - 2 pounds of Chicken Breasts (Boiled in water and cut up into pieces)<br />2 cans cream of mushroom soup<br />1 cup sour cream<br />3/4 - 1 cup salsa (to your liking)<br />1 - 1 1/2 cups grated cheddar cheese<br /><br />Boil the chicken on medium for about an hour or until well cooked. Rinse off, cut up, and set aside. In a bowl mix in the cans of Cream of Mushroom soup, sour cream, and salsa. I also mix in a bit of the cheddar cheese just for fun. Once that is all mixed up add the chicken and mix in. Spray a 9x13 pan with PAM or whatever you use. Tear up your flour taco shells and layer on the bottom. It usually takes about two shells or more to cover the bottom. Next, take half the chicken mixture and spread over the first layer of shells. Then shred about two more taco shells over chicken layer. After that add the remaining chicken mixture and spread until even. Sprinkle top with cheese. Cook at 325 degrees for 30 minutes.<br /><br />If the instructions confused you a bit here are pictures in the order of how the layers should be.<br /><br /><br /><p><img id="BLOGGER_PHOTO_ID_5297322515638141458" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjri_9bPk87p8pmnY8vN_G8sDnmJJJANP6saEGrCJ1g3BO5vAqTD_VWBEaOUmhFvayW5eEsWIdd2R2RMRNkY8hKaj5p7mJaUcUKJZ6Zw-1FfpAHwsxGnlIz838kBxC70u4wGBMM7mipNKk/s320/IMG_2191.JPG" border="0" /><br /><img id="BLOGGER_PHOTO_ID_5297322519275811858" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEidBmyDN1gPLyxTQfZf4uZhPi9km_qhNVzEVjytGY3IWhkoOJLG9NDOzQtTTjYF0v5tFWGnssR_Z83WlS81ic2QXqZrOpv8msFCpPybJ2j1JxsMgWq9WgOdVO8mzhGj-ANoMm3jEB1tP78/s320/IMG_2192.JPG" border="0" /> <img id="BLOGGER_PHOTO_ID_5297322522615745026" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgG8sPyyWcqlOB7EEmPC6iRAJ9iRHDR36mS1Ycxbj04XwMrcZpOlNfBKpW90TFA2aAypKfFQwNp-XdMtiQIaSUM5Z2ZhCkju-BkFGSqPK84lYYWoLpNDHQ1MbVrZUJhhfYbMGMG_9VXIL4/s320/IMG_2193.JPG" border="0" /> <img id="BLOGGER_PHOTO_ID_5297326753396045138" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgxgwwzMhex1CPDucQD49juBgAyoKMjLP8APn3omzRWrQbzgxVP__qOWUhdesuxjIyGtDI2sNkS68_MMoMVozhrFhscgj7nnq9CYq3CjQLBzi2I0rjiepx1PGhC7acLO5ELeB1FtIB3XEs/s320/IMG_2194.JPG" border="0" /> <img id="BLOGGER_PHOTO_ID_5297323476115350722" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgucgeQatb02oBKwlKscb5RctyOMucO6E76y-9egYWI1R6opCUJuxvz_Svc5JGuJlnfrW3ddci2LCnYi7l7ArEtkeC4P20SOQ9VprWjCoLf1ll3yMSsrOk35HPlIXhE9t8MNNVXZGyigPE/s320/IMG_2195.JPG" border="0" /> </p><p align="center"><em><span style="color:#ff0000;">THE FINAL PRODUCT</span></em></p><p align="center"><img id="BLOGGER_PHOTO_ID_5297324458087265042" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 246px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiFZpttqj0cVi1j9AXpa9JFhgLTPL1GdgZePOIjFvgBjcS-f47K1twyL-2gsvPpBraGQvnqlcwtjmT-GTOepFZC-vGwi-u5P4ncwiA9mjphRbR8U_jh2a0d8l-FRH-de_SBOhakTfBhKv4/s320/IMG_2198.JPG" border="0" /></p>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com5tag:blogger.com,1999:blog-6952546426156105384.post-88841714684752376302009-01-15T11:16:00.000-08:002009-01-15T22:07:57.414-08:00WARNING!!! HEALTH TIPS!<span style="color:#cc0000;">Now remember, I warned you.</span><br /><div></div><br /><div>I told you when I started this it wasn't going to be all about recipes. I'm doing this to serve you up some of my favorite things.<br /><br /></div><div>Anyway, a few years ago I lost 40 pounds. This was back in 2004. I had a couple different work out videos that I would do on occasion but nothing really would work. Of couse I was very impatient, as I am now. I wanted results and I wanted them <span style="color:#ff0000;"><strong><em>NOW!</em></strong> </span><span style="color:#000000;">There was a certain talk show host that was concentrating on weight loss that year. He, I mean this host, had books out and plans. Well, I did get a book or two of this particular host. I hate fish and a lot of diet plans have this so I just stuck to what I eat on a regular basis but on a smaller scale. Basically, it came down to eat what you want but in smaller portions. I really liked the fact the we were allowed to have chocolate too. I started watching my portion sizes but allowed myself the sweet stuff too. On top of all this I decided to try out a new work out video. What could it hurt? The only problem was it was just the bar and videos it included. It was a step aerobics program. Here is their FREE advertisement. </span></div><div> </div><img id="BLOGGER_PHOTO_ID_5291767167328169346" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEho9cAlP-ZRGK1CEUeQwlmKWmbJfUqG4iKHa_mmTNmx17-qvi757NHQKY-tXhkcHaRBhvwO6mT37aNYQZcT1QVz2wz__JJze-IIe6Jw3kYdN_KSHUhRWVoNTnOK9ix-Cw8n11OITHVIdFk/s320/IMG_2176.JPG" border="0" /> <div><span style="color:#000000;"></span></div><div><span style="color:#000000;"></span></div><br /><div><span style="color:#000000;"><span style="color:#cc0000;">THE FIRM</span> is what I decided to start doing. I had to adjust a bit. I didn't have the steps. So, I used my stools that I had in my house. Probably not the smartest thing to do and I am not recommending it so don't hold me responsible if you decide to do something so irresponsible. One or two of the videos I had to use a chair to support myself when doing weights. They use the "Fanny lifter" for these routines. The stool was too low so I had to once again improvise. All I can say is that I am a HUGE believer in <span style="color:#cc0000;">THE FIRM</span>. I am doing it all again now. The only difference is that I have the actual steps a.k.a Fanny Lifter. This definitely is one of my favorite things.</span></div><div></div><br /><br /><div>Now, I know you all have your favorite work out routines, videos, or whatever. JUST....STICK...TO IT!!!! I will be the first to admit that I am <strong><em>extremely </em></strong>frustrated right now. I just have to tell myself that I am building muscle and the weight will start coming off. It happened five years ago. Since then I had two more kids and now I am working at getting all that weight off again. <strong>It will take time. </strong>DON'T....GIVE...UP!!! Once the weather is nice I will be going out for my walks again as well. Keep it going even if you don't see results. Something is happening but it might not show it on the scales just yet. These things do take time. I will be reading this over and over to remind myself of that. Good Luck to any of you who chose to be healthier as one of your New Years Resolution. I started this off before the New Year but I plan to stick to it. I will report back every so often. Maybe this will motivate me. My goal, if my body will allow it, is to lose 50 pounds by the end of the year. I'll be fine with 40 but it really would be nice to lose that extra 10.</div>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com4tag:blogger.com,1999:blog-6952546426156105384.post-76531770050409043392008-12-19T09:59:00.001-08:002008-12-19T10:04:58.904-08:00Hot Fudge SauceI am finally getting around to posting this requested recipe. There are actually a few different ones I use but this one is <span style="font-style: italic;">REALLY</span> easy. I <span style="font-style: italic;">LOVE</span> this one. I don't really care to buy boxed brownies. Don't get me wrong, I will still eat them when given the chance. I just really like making them from scratch. If anyone has read the comment from a previous post it does not call for "Nine parts crack." Although, he sent me rolling on the ground with that comment. Here is your recipe:<br /><br /><br /><div style="text-align: center;"><a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjvpSYOxsvNiUVL4ZNaf81klNDtUIZADj2xOzHiIw1QyU4pQWjTE_WH6wBjjqhNOW0S_EIeV2qsABcn4e1F82wzaKJQUvBYbZ9etpg_TxWzZs94RlnVJBdaBOIhVC8NZy1H1bbaDSLvMHE/s1600-h/IMG_2045.JPG"><img style="margin: 0px auto 10px; display: block; text-align: center; cursor: pointer; width: 286px; height: 213px;" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjvpSYOxsvNiUVL4ZNaf81klNDtUIZADj2xOzHiIw1QyU4pQWjTE_WH6wBjjqhNOW0S_EIeV2qsABcn4e1F82wzaKJQUvBYbZ9etpg_TxWzZs94RlnVJBdaBOIhVC8NZy1H1bbaDSLvMHE/s200/IMG_2045.JPG" alt="" id="BLOGGER_PHOTO_ID_5274688037729754866" border="0" /></a><br /><br /></div>EASY DOUBLE CHOCOLATE CHIP BROWNIES<br /><br />2 cups (12 ounce package) Semi-Sweet Chocolate Chips, divided<br />1/2 cup butter or margarine cut into pieces<br />3 eggs<br />1 1/4 cups all-purpose flour<br />1 cup sugar<br />1/4 tsp. baking soda<br />1 tsp. vanilla<br />1/2 cup chopped nuts (optional---I have never used them)<br /><br />MELT 1 cup chocolate chips and butter in large, heavy saucepan over low heat; stir until smooth. Of course I changed a few things and thought of a few other things I should have done after I ate it. Everyone liked it so that was a plus. I am sure you all have a good Potato Soup recipe but here is another quick and easy one.</div><div align="left"></div><br /><div align="left">btw- I will be trying to get a post up of a cute Thanksgiving activity you can make to place at each dinner plate. Look for that to come soon.</div><div align="left"></div><div align="left"></div><div align="left"></div><div align="left"></div><div align="left"></div><div align="left"></div><div align="left"><br /><br />Potato Soup</div><div align="left"></div><br /><div align="left">6 slices bacon (I think if you really like bacon you probably will want more than this.)</div><div align="left">8 med/large potatoes (It calls for three pounds but I bought a five pound bag and ended up using 8 potoates. It all depends on the sizes that come out of the bag.)</div><div align="left">4 tsp. salt</div><div align="left">1 cup sour cream</div><div align="left">1 stick butter</div><div align="left">2 2/3 cup milk</div><div align="left">1/2 tsp pepper</div><div align="left"></div><div align="left">4 scallions (Didn't have any when we made it but would probably add an excellent flavor as a topping)</div><div align="left">2 cups shredded Cheddar Cheese (or whatever you desire)</div><div align="left"></div><br /><div align="left">Cook the bacon pieces over medium heat in a skillet until crisp. Transfer bacon to drain and set aside. Peel, rinse, and cut potatoes into thirds (or a bit smaller as I did). Place them in a large pot with water to cover the potatoes, and add 2 tsps. salt, bring to a boil. Reduce heat to a simmer and cook until the potatoes are very soft -- about 45 min. or less. Drain potatoes, discard the water, return potatoes to pot. Mash with a potato masher (I used a fork since I don't have a potato masher :). ) Add the sour cream and butter and stir until melted. Add the milk, pepper, and remaining salt and bring the soup back to a simmer. Right before serving, I actually added in about a cup or more of the cheese to let melt into the soup. Divide into bowls and garnish with scallions, cheese, and bacon. Eat and enjoy.</div><div align="left"></div><br /><div align="left">Afterwards I wondered if a bit of Garlic or Season salt would have added a bit more of a fun flavor. This recipe seemed to be easy. You could probably play around with it and get it to your liking. But as you can see below it was enjoyed by even the little one. </div><br /><div align="left"><br /></div><img id="BLOGGER_PHOTO_ID_5265941185309052866" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 320px; CURSOR: hand; HEIGHT: 240px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjHVC4z9vW7PPQHS8xNQccxWJzxq1OQu9xjrmnWTvf07Iy1l2ijcmfH-Bh_CkqCaqoPWABOeZXTAKAUsYTHlAiTITUIhFy22HmR88hFs8VEIIp1LVcq2fJTWBSLczb5kbKYjsATtvZnUS8/s320/IMG_1964.JPG" border="0" /></div>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com3tag:blogger.com,1999:blog-6952546426156105384.post-26356364907218480192008-10-28T20:55:00.000-07:002008-11-04T20:40:14.982-08:00Cheesey Breadsticks<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjp2s0djDfU8rG0UzMbbs2C2hpJhxRmnXgt-1_6OGqfVkL3YCL76QX4tnqN3_Gk0mK9J1Kh6PNTM8L49coEh-8RUxmiAwgti3TmX6mS7QzjBXtXVvbA8iUF9lx3MkltkzY0SUfPenbC-gM/s1600-h/IMG_1948.JPG"><img id="BLOGGER_PHOTO_ID_5265028258070725954" style="DISPLAY: block; MARGIN: 0px auto 10px; WIDTH: 400px; CURSOR: hand; HEIGHT: 306px; TEXT-ALIGN: center" alt="" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjp2s0djDfU8rG0UzMbbs2C2hpJhxRmnXgt-1_6OGqfVkL3YCL76QX4tnqN3_Gk0mK9J1Kh6PNTM8L49coEh-8RUxmiAwgti3TmX6mS7QzjBXtXVvbA8iUF9lx3MkltkzY0SUfPenbC-gM/s400/IMG_1948.JPG" border="0" /></a><br /><div>This is one of my favorite recipes that I like to whip up when having Spaghetti or Lasagna. They go great with soup as well. So for those of you who saw this post before I forgot to get a picture of them. I made them again tonight and I remembered to take a picture.</div><div><br />1 cup warm milk<br />2 3/4 cup flour (You may not need it all. Don't add it into your recipe all it once. Just a little at a time)<br />3 T sugar<br />1 1/2 tsp. salt<br />1 T. yeast<br />1/4 cup butter<br /><br />Cheddar Cheese ( I sometimes do half mozzarella cheese and half cheddar)<br />garlic salt<br /><br />In a bowl mix the yeast, sugar, and warm milk. Let sit for about five minutes. Add the salt, only 2 tablespoons of the butter melted, and the flour. Mix together well. Knead the dough. I usually only need it for about a minute or two. Cover and let sit until double in size. About an hour later I usually finish it off. Pre-heat the oven to 350 degrees. Take the dough and place it on a greased pan. You can use a round pizza pan or rectangular cookie sheet. I roll the dough to the shape of the pan. Melt the remaining 2 tablespoons of butter and brush over top of the dough. Sprinkle with garlic salt. Finally, cover it with the cheese. Put on as much or as little as you would like. I then use a pizza cutter and pre-cut slices before baking. Once down the middle and then into 1 1/2 - 2 inch strips. Bake for 15-20 min. It will depend on the oven. I cook it for 17 minutes . It comes out perfect.</div>R Clanhttp://www.blogger.com/profile/14961545154276210110noreply@blogger.com2tag:blogger.com,1999:blog-6952546426156105384.post-92210295492472364082008-10-28T13:28:00.000-07:002008-10-28T13:36:35.166-07:00Welcome to Ruthy's Diner<div align="left"><span style="font-size:130%;">Here at <em><strong><span style="color:#ff0000;">R</span>u<span style="color:#ff0000;">t</span>h<span style="color:#ff0000;">y</span>'<span style="color:#ff0000;">s</span> D<span style="color:#ff0000;">i</span>n<span style="color:#ff0000;">e</span>r</strong></em> you will find plenty of things on the menu.
